INTRODUCTION

Carrot is considered a very favorite vegetable in all countries of the world and is a very nutritious food. Temperatures below the optimal carrot growing temperature of 60-70 degrees Fahrenheit will reduce yields. Temperatures above 80 degrees Fahrenheit produce an unpleasant taste. Carrots are divided into two types. An Asian carrot is long, dark colored and sweet. While other carrots are considered to have better texture with softer skin and less fiber. The most cultivated varieties in Pakistan include T-29, DC-90 and C-3. The total production of carrot in Pakistan is 0.716 MT. The cultivated area in Punjab is 20747 acres

Carrot green leaves are also rich in proteins, minerals and vitamins which are very beneficial for health. The alkaline components found in carrots keep the blood clean in the human body and it develops the body as well as creates acidity in the body. Carrot juice is also called the “charismatic drink”. Which is useful for children and adults alike and carrot juice energizes the eyes and has proven to be very helpful in keeping the human skin fresh. Chewing carrots after eating kills the germs found in the mouth and stops the bleeding from the gums and stops the decay of the teeth. Carrots have been found to be helpful in treating digestive disorders such as stomach ulcers, small and large intestine and many other ailments. Drinking carrot juice relieves constipation and cleanses the bowels.

During diarrhea, carrot juice fills up the lack of water and salts and is also very useful for stomach worms. Carrot halwa gives strength to the body and is useful in heart diseases. Drinking a glass of carrot juice daily does not prevent heart disease. Carrots have more nutrition than all vegetables and eating carrot jam with gold or silver foil is extremely refreshing and nutritious. Drinking a glass of carrot juice with a few grams of almonds every morning gives immense strength. If it is too cold, it can be warmed a little and drunk. Carrot halwa is usually made from yellow pink carrots. This halwa is made by mixing one to one and a half chilies, salt and rai, which gives strength to the stomach and is best in curing liver and spleen diseases. A small amount of it while eating is very useful. Carrots dispel illusions and dispel mental anxiety and refresh the soul.

CAUTION:  

Carrots are slow digesting and cause stomach ache. They should always be eaten with sugar, salt and spices. It should be eaten in proper quantity. Carrot is a vegetable that should be washed well before eating and should be eaten dry otherwise it may cause cough. Overeating causes swelling in the stomach.
